I haven't felt much inspiration in the kitchen lately, or at least none that I've been motivated enough to write about. However, I made these little treats last night and was immediately blown away.
I believe Scott's first words were, "Holy crap! This is diet food?"
If you'll allow me to brag on my hubby for a second, I just want to say how proud of him I am. Most people fluctuate in their weight at different times, and he promised himself that after the holidays it would be time to shed some pounds. Of his own accord (and not due to my nagging), he signed up for Weight Watchers for Men and has been dedicated to seeing it through.
His motivation has given me the desire to make a strong, hard effort at feeding my family the best foods possible. Does this mean I can suddenly ignore my sweet tooth? Not in the least, and especially not at eight months preggo!
I made a Facebook shout-out for some healthy dessert recipes and got a few that sound super yummy, but the one I decided to try first came from my Mom's Weight Watchers cookbook.
Let me tell you... these taste nothing like a Weight Watchers recipe.
They're chocolate-y, chewy and decadent--very closely identical to the taste and texture of a warm, gooey brownie.
I hope you'll trust me when I tell you to get in the kitchen, whip out the following six ingredients and
MAKE. THESE. NOW.
Weight Watchers Chewy Chocolate Cookies
Yield: 21 cookies
Points Per Cookie: 2
**Side note: I only managed to get 16 cookies from this recipe, which Scott figured out to be 2.5 points each.**
Ingredients: 2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/4 tsp salt
1 T cornstarch
1/4 cup chopped walnuts, toasted
2 egg white, lightly beaten

Directions:
- Preheat oven to 300 degrees F.
- Combine first five ingredients a bowl.
- Add the lightly beaten egg whites and stir until a thick dough forms.
- Use a spoon to form one-inch balls (I tried using my hands and do NOT recommend it), and place on a lined baking sheet.
- Bake for 17 mins and move to a cooling rack.
Enjoy cooled or fresh outta the oven...
... and savor every guilt-free bite.

These look AMAZING! Can't wait to try them!! FYI I just input this into the Recipe Builder and at 16 cookies per recipe, they came up at 2 points plus per cookie (which incidentally would be the same for 21 per recipe, so I say go for the bigger cookie! haha).
